Remove screenshotConverter utility

Deleted src/utilities/screenshotConverter.ts, which contained logic for parsing OCR text, building screenshot grids, and converting them to AAC page/tree structures. Unused. see scripts/conversion/txt-to-gridset.ts for a better way of doing this
