Option to exclude certain fields

Thanks for this great plugin 🙏
I wonder how I could use it on a model I'd like to track changes yet exclude one specific field as it holds a blob which I don't need to track to safe space.

This isn't supported currently, but pretty easy to implement I suppose. We could accept a new option which would be a list of attributes to exclude, and filter the Model attributes based on that
