promote workshop: archive Module 06b and simplify workshop flow

Promotes the dev-verified workshop release to production.

• archives Module 06b from the active learner and instructor journey
• routes Module 06 directly to Module 07
• runs the ClickStack collector before enabling Managed ClickStack
• simplifies architecture and trip-flow diagrams with exact Postgres and ClickHouse table names
• keeps warned historical 06b routes available but unlisted

Dev verification

• dev deployment workflow passed Linux CI, Windows CI, immutable image deploy, and public-route verification
• https://dev-workshop.demohouse.cloud/docs returns 200 without an auth redirect
• active docs contain no 06b/LibreChat navigation
• archived learner 06b URL returns 200 with warning and Module 07 link
• ClickStack displays collector Step 1, Managed ClickStack Step 2, and up -d --build
• simplified diagram renders cleanly with no console errors
