Updates the version-tag Docker image publishing workflow so that Git tags (e.g., v1.0.1) publish the expected image variant under the plain version tag, aligning versioned tagging behavior with the branch workflows.
Changes:
- Publish
${{ github.ref_name }}(e.g.,v1.0.1) tags for the full image to DockerHub and GHCR. - Remove publishing of the plain
${{ github.ref_name }}tag from the minimal image build, leaving only-minimalfor that variant.
