BUG-T2: Fix zsh glob failure in uvx Web UI extras commands

Description

Fixes BUG-T2 by making uvx Web UI extras command examples shell-safe for zsh and adding explicit troubleshooting for zsh: no matches found: mcpbridge-wrapper[webui].

Updated docs/config text and DocC counterparts so shell command snippets use:
uvx --from 'mcpbridge-wrapper[webui]' ...
