.NET 11 support metadata still listed Windows Server 2012 and 2012-R2, but their ESU window ends before .NET 11 GA. This PR updates the .NET 11 support matrix to align with what will be supported at ship time.

  • Windows Server support matrix updates

    • Removed 2012-R2 and 2012 from windows-server.supported-versions.
    • Removed 2012-R2 and 2012 from windows-server-core.supported-versions.
  • Metadata alignment

    • Updated release-notes/11.0/supported-os.json last-updated to 2026-07-13.
    • Regenerated/updated release-notes/11.0/supported-os.md so rendered tables match JSON source.
  • Documentation cleanup

    • Removed ESU-specific notes for Windows Server 2012/2012-R2 that no longer apply after dropping those versions from supported lists.
