Several recent commits changed how mdkd is configured but the README was never updated to match. The esplora section in the example config was wrong (chain source is now hard-coded in NetworkInfra, not read from config.toml), the regtest env vars table was missing the five new bitcoind RPC and VSS variables, and there was no mention of --socks-proxy or VSS storage. Dropped stale "follows ldk-server's format" wording since config parsing is fully owned by mdkd now. Added a Storage section for the VSS remote backup and local SQLite split.
